Recipe of the Week: Lemon Asparagus


Ben and I are getting so excited for asparagus season! It's started showing up in our grocery stores, and we just can't wait till the picking and prices are right. Last Spring I had some yummy asparagus and I just had to get the recipe from the maker. I had no idea the secret she was about to tell me was so easy.

Blanche it, ice it (or throw it in a cold bath).  Cut a lemon in half, squirt the juice on top, and then sprinkle some bread crumbs on as a final finish.

So all you need:
1 Bunch Asparagus
1/2 a fresh lemon (or 3 TB lemon juice will do fine) 
3 TB Bread crumbs

All you have to do:
Boil the asparagus until bright green and tender
Place asparagus in cold water or ice bath
Drain
Squeeze juice from 1/2 lemon on aspargus
Sprinkle with bread crumbs

Hopefully it doesn't sound so simple you question it's yumminess. Make it as soon as fresh asparagus hits your local grocery store, or ditch bank.
